Bev's Banana Bread
3/4 cup sugar
1/2 cup margarine or butter, softened
2 eggs
1 cup (2 medium) mashed ripe bananas
1/3 cup milk
1 teaspoon vanilla
2 cups all purpose flour
1/2 cup chopped nuts, if desired
1 teaspoon baking soda
1/2 teaspoon salt
Heat oven to 350 degree F. Grease bottom only of 9x5 or 8x4 inch loaf pan. In large bowl, beat sugar and margarine until light and fluffy. Beat in eggs. Add bananas, milk and vanilla; blend well. In small bowl, combine flour, nuts, baking soda, and salt; mix well. Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan. Bake at 350 degree F for 50 to 60 minutes until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.
Yield: 1 (16 slice) loaf.
Jane's Pecan Snickerdoodles
2-1/2 cups flour
1 cup finely chopped PLANTERS Pecans
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
1 cup (2 sticks) butter or margarine, slightly softened
1-3/4 cups sugar, divided
2 eggs
1 tsp. ground cinnamon
PREHEAT oven to 375°F. Mix flour, pecans, cream of tartar, baking soda, and salt in large bowl; set aside.
BEAT butter and 1-1/2 cups of the sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs; beat until well blended. Add dry ingredients; beat on low speed until well mixed. Form dough into 1-inch balls. Mix remaining 1/4 cup sugar and cinnamon. Roll balls in cinnamon sugar. Place 2 inches apart on baking sheets.
BAKE 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
